8 slices light whole-wheat bread 1 c evaporated skim milk 1 egg plus 4 egg whites or eight ounces soft tofu 1/4 c wheat germ 1 ts honey 1 tsp vanilla Canola oil cooking spray Dash of cinnamon and salt Any chopped fresh fruit to use as a topping Preheat oven to 350 deg F (175 deg C). Spray a 13"x 9" baking pan with canola oil. Arrange the bread slices in the pan, making 2 layers if necessary. Combine all the remaining ingredients except the fruit and beat well, or whip in a food processor. Pour the mixture over the bread, cover, and let stand for 20 minutes or in the refrigerator overnight. Bake for 30 to 40 minutes or until lightly browned. Serve with chopped fresh fruit or sprinkle with powdered sugar.
